INGREDIENTS
- I lb steak, thinly sliced (ribeye or flank works well)
- I medium onion, sliced
- I green bell pepper, sliced
- I cup sliced mushrooms
- 3 cups cheese tortellini, cooked and drained
- I cup shredded provolone or mozzarella cheese
- 2 tbsp butter
- I tbsp oil (avocado or vegetable oil)
- 2 tbsp Worcestershire sauce
- I tsp garlic powder
- Salt and pepper, to taste
INSTRUCTIONS
- Preheat the Griddle: Heat your Yoder smoker with the griddle insert to medium-high heat. Add the butter and oil to the griddle, spreading it evenly.
- Cook the Vegetables: Add the sliced onion, green bell pepper, and mushrooms to the griddle. Season with salt and pepper. Cook until the vegetables are softened and slightly caramelized, about 6-8 minutes.
- Cook the Steak: Push the vegetables to one side of the griddle. Add the pre-sliced steak to the griddle, spreading it out in a single layer. Season with garlic powder, Worcestershire sauce, salt, and pepper. Cook for 2-3 minutes, stirring occasionally, until browned and cooked through.
