Smoked Cheesesteak Tortellini

This smoked cheesesteak tortellini is the ultimate comfort food with a smoky twist! INGREDIENTS

  • I lb steak, thinly sliced (ribeye or flank works well)
  • I medium onion, sliced
  • I green bell pepper, sliced
  • I cup sliced mushrooms
  • 3 cups cheese tortellini, cooked and drained
  • I cup shredded provolone or mozzarella cheese
  • 2 tbsp butter
  • I tbsp oil (avocado or vegetable oil)
  • 2 tbsp Worcestershire sauce
  • I tsp garlic powder
  • Salt and pepper, to taste

INSTRUCTIONS

  1. Preheat the Griddle: Heat your Yoder smoker with the griddle insert to medium-high heat. Add the butter and oil to the griddle, spreading it evenly.
  2. Cook the Vegetables: Add the sliced onion, green bell pepper, and mushrooms to the griddle. Season with salt and pepper. Cook until the vegetables are softened and slightly caramelized, about 6-8 minutes.
  3. Cook the Steak: Push the vegetables to one side of the griddle. Add the pre-sliced steak to the griddle, spreading it out in a single layer. Season with garlic powder, Worcestershire sauce, salt, and pepper. Cook for 2-3 minutes, stirring occasionally, until browned and cooked through.
  4. Combine Ingredients: Mix the cooked steak with the vegetables on the griddle. Add the cooked tortellini and stir everything together. Let the mixture cook for 2-3 minutes to combine the flavors.
  5. Melt the Cheese: Sprinkle the shredded provolone or mozzarella over the mixture. Cover the griddle with a lid or foil to trap the heat and melt the cheese. This should take about 2-3 minutes.
  6. Serve and Enjoy: Once the cheese is melted and everything is well combined, remove the cheesesteak tortellini from the griddle. Serve hot and enjoy a smoky, cheesy twist on a classic comfort dish!
