Chipotle Skirt Steak Tacos

The YS640s Pellet Grill


INGREDIENTS

  • MARINADE
  • 1/2 Spanish Onion
  • 1Tb Minced Garlic
  • 1 Lime
  • 1 Orange
  • 2Tb Soy Sauce
  • 1Tb Worcestershire
  • 1Tb Cumin
  • 1Tb Paprika
  • 1/2Tb Chipotle Powder
  • 1Tb Pepper
  • 1Tb Kosher Salt
  • 1/2 Cup Olive Oil

  • 2 pounds skirt steak
  • Sliced red onion (or pickled if you’d like!)
  • 4 ears of fresh corn
  • Avocado
  • Hot sauce
  • Cotija cheese
  • Lime

INSTRUCTIONS

  1. Bring together all of the ingredients for the marinade in a tray and let your steak soak up the goodness for at least a couple hours
  2. While you wait for the steat to marinate, fire up your Yoder Smokers YS640S grill
  3. Remove the heat diffuser plate or diffuser plate access door and set the temp to 450°F
  4. Roast the corn over the direct flame until you get a mild char
  5. Remove the corn and crank the YS640S temp up to 600°F
  6. While the grill is coming up to temp slice your onion, crumble your cotija, and cut your limes
  7. Next remove the steak from the marinade, wipe off any extra marinade and head back to the grill
  8. Flame-grill the steak over the direct flame for a couple minutes on each side
  9. Slice the steak and build some tacos!
