INGREDIENTS

  • 1 lb green beans, ends trimmed and halved
  • 1/2 each yellow onion, sliced thin
  • 1 cup Smoke on Wheels BBQ Marinade
  • Cattleman’s Grill Trail Dust All Purpose Seasoning
  • For the Gremolata:
    • 1/4 cup fresh parsley, minced
    • 1 tsp garlic, grated on the microplane
    • 1 tsp lemon zest

    INSTRUCTIONS

    1. Light two chimneys of lump charcoal and let them burn hot to the top. Dump on one half of the Yoder Smokers El Dorado Santa Maria Style Grill. Place splits of oak wood on top.
    2. Place a steel veggie basket on the grate above the fire to preheat.
    3. Combine the green beans, onion and Smoke on Wheels BBQ Marinade in a mixing bowl. Season with Cattleman’s Grill Trail Dust All Purpose Seasoning. Mix well.
    4. Dump the green bean mixture into the grilling basket. Let cook, stirring occasionally until charred and softened, about 20 minutes. You raise or lower the grate to adjust the amount of char to your desired level.
    5. While the green beans cook, make the gremolata. Simply combine the parsley, garlic and lemon zest and mix.
    6. Immediately after removing the green beans from the grill, add the gremolata and stir into the mixture.
