Pizza Dip on the Yoder

INGREDIENTS

For the Pizza Dough
  • 325g warm (110ºF) water
  • 5g Caputo Yeast
  • 500g Caputo ’00’ Flour
  • 10g Jacobsen Salt Co. Kosher Sea Salt
For the Skillet
  • 2 tbsp Texas Olive Ranch Extra Virgin Olive Oil
For the Dip
  • 8 oz Cream cheese
  • 1 cup (4 oz) low moisture Mozzarella, grated
  • 1 tbsp Cattleman’s Grill Italiano Seasoning
For the Topping
  • 1 can (3/4 cup Urban Slicer Pizza sauce
  • 1 cup (4 oz) low moisture Mozzarella, grated
  • 4 oz (about 1 cup) Pepperoni, diced
  • 1/4 cup parmesan
For the Garlic Butter
  • 1/4 cup unsalted Butter
  • 2 tbsp Texas Olive Ranch Extra Virgin Olive Oil
  • 1 tbsp garlic, microplane

INSTRUCTIONS

For the Dough

  1. Pour the warm water into the bowl of a stand mixer. Sprinkle the yeast over the water. Stir and let sit for 5 minutes. Add the flour, then the salt. With the mixer fitted with the hook attachment, mix on medium-low (2nd gear on the KitchenAid) until a ball is formed, about 1 minutes. Once all ingredients are incorporated and a ball is formed mix 8 minutes.
  2. Transfer to an oiled bowl. Cover with plastic wrap. Let rise until doubled in size, about 2 hours.
  3. Divide the dough into 1.5 oz dough portions. Form dough into balls/rolls.
  4. Pour 2 tbsp Texas Olive Ranch Extra Virgin Olive Oil in a 12” skillet. Place the dough balls around the perimeter of the skillet. Cover with plastic wrap. Let proof until doubled in size, about 1.5 hours.
  5. Preheat your Yoder Smokers YS640S Pellet Grill to 450ºF with the Yoder Smokers Wood Fired Oven installed.

For the Dip

  1. Combine softened cream cheese with mozzarella. Season with Cattleman’s Grill Italiano Seasoning. Mix with a spatula.
  2. Place the cheese mixture in the center of the skillet. Top with pizza sauce, the remaining mozzarella and pepperonis.

For the Garlic Butter

  1. Melt the butter, Texas Olive Ranch Extra Virgin Olive Oil and grated garlic together. Brush the mixture on top of dough.
  2. Grate parmesan with a microplane over the bread, then transfer to the wood fired oven.
  3. Bake until the rolls are browned and cheese is melted, about 15-20 minutes, rotating the skillet halfway through the cook.
