INGREDIENTS

  • 1 lb Bacon
  • 1 Medium Sized Onion
  • 1 15 oz Can Dark Red Kidney Beans
  • 1 15 oz Can Light Red Kidney Beans
  • 1 15 oz Can Pinto Beans
  • 1 15 oz Can Black Beans
  • 1 20 oz Bottle Head Country Original BBQ Sauce
  • 4 Teaspoons "Oh Hell Yeah" Seasoning (or your favorite BBQ rub)

INSTRUCTIONS

  1. Slice the bacon into 1-inch pieces and cook in a cast iron Dutch oven over medium heat until crispy.
  2. While the bacon cooks, finely chop the onion using a food processor.
  3. Remove the cooked bacon from the Dutch oven with a slotted spoon, leaving the rendered bacon grease behind.
  4. Add the chopped onion to the Dutch oven and sauté in the bacon grease until soft and translucent.
  5. Stir in the cooked bacon, beans, barbecue sauce, and your favorite BBQ rub, mixing well to combine.
  6. Place the Dutch oven in your smoker and cook at 250°F for about 4 hours, stirring every hour to ensure even cooking.
  7. Once the beans are thick, smoky, and bubbling, remove from the smoker and serve hot.
