Grilled Apple Cider

INGREDIENTS

  • 6 apples, assorted sweet and tart, quartered
  • 1 orange, quartered
  • 2 cinnamon sticks
  • 1” knob fresh ginger, sliced
  • 1 tsp cloves
  • 1 tsp whole allspice
  • 8-ish cups water
  • 1/4 Tapped Maple Syrup

INSTRUCTIONS

  1. Preheat your Yoder Smokers YS640s Pellet Grill to 450ºF, set up for direct grilling.
  2. Grill the apples and oranges to char.
  3. Combine all ingredients in a pot and cover with water. Bring to a simmer over high heat, then reduce the heat to medium-low. Cook until apples are soft, about 2 hours.
  4. Mash the apples and oranges. Cook for another half hour.
  5. Strain through a fine mesh strainer into a container, pressing the ingredients as the liquid drains.
  6. Mix the maple syrup into the liquid and adjust the flavor to your taste.
  7. Optional: Served spiked with Bourbon.
  8. Serve warm with a cinnamon stick and orange slice for garnish.
