Watermelon Habanero Margaritas

One popular theory traces its creation to a socialite named Margarita Sames, who concocted the drink in Acapulco in the late 1940s. Another story suggests that it was invented by a bartender named Carlos “Danny” Herrera in Tijuana during the 1930s, who crafted the cocktail for a patron allergic to many spirits but not tequila. Regardless of its precise beginnings, the margarita quickly gained popularity, evolving into a beloved classic enjoyed worldwide. Today, it remains an iconic symbol of Mexican culture, celebrated with gusto on occasions like Cinco de Mayo, its tangy, refreshing flavors capturing the essence of fiesta and fun.

INGREDIENTS

  • 3 fl oz (6 tbsp) tequila blanco
  • 1 fl oz (2 tbsp) orange liquor
  • 1 1/2 fl oz (3 tbsp) fresh squeezed lime juice
  • 1 fl oz (2 tbsp) KC Canning Co. Watermelon Habanero Shrub
  • 2 tbsp Jacobsen Salt Co. Habanero Salt, for the rim
  • 2 tbsp simple syrup

INSTRUCTIONS

  1. Preheat your Yoder Smokers YS640S Pellet Grill to 450ºF with the diffuser removed and the Yoder Smokers Cast Iron Griddle installed over the fire box.
  2. Halve the limes and sear on the griddle.
  3. Run a lime around the rim of the margarita glasses. Place the Jacobsen Salt Co. Habanero Salt on a small plate and turn the glass over to rim the glass with the salt.
  4. Squeeze the lime juice and strain.
  5. Combine all ingredients in a shaker with ice and shake well. Pour over crushed ice in the margarita glass.
