Garlic Ginger Teriyaki Chicken Skewers

INGREDIENTS

  • 1.5 lb Chicken Breast or Thighs
  • Boneless Skinless Chicken Thighs
  • 2 Medium Sweet Onions
  • 8oz Whole Baby Bella Mushrooms
  • 16oz Teriyaki Sauce/Glaze
  • 1 tbsp. Minced Garlic
  • 1.5 tsp. Grated Fresh Ginger
  • Skewers (Wooden or Metal)

INSTRUCTIONS

  1. If using wooden skewers, soak in water while preparing chicken and vegetables.
  2. Mix together teriyaki sauce, garlic and ginger, allow flavors to incorporate. This can be done ahead of time.
  3. Cut chicken in pieces about 1-1.5 inches.
  4. Cut onions into quarters and separate layers discarding the outer skin.
  5. Remove seeds from peppers and cut into pieces similar in size to chicken.
  6. Remove stems from mushrooms and cut in half.
  7. Assemble skewers alternating between chicken and vegetables.
  8. Place assembled skewers in a large container and evenly coat in marinade. Place in fridge covered, for at least 1-2 hrs or overnight.
  9. About 1 hr before cooking, install pizza oven in smoker with diffuser door open, set to 400° and allow to preheat.
  10. Place skewers on the grate to the right of the pizza oven.
  11. Cook skewers until chicken reaches 145-150°.
  12. Place skewers on an appropriate pan and slide pan into pizza oven.
  13. Rotate pan and skewers as needed until chicken reaches 165°, and chicken and vegetables have charred edges.
  14. Remove Skewers from pizza oven and allow to rest for a few minutes.
  15. SERVE AND ENJOY!
Note: Chicken and vegetables can be marinated before assembly.
