INGREDIENTS

  • 1.5 lbs chicken thighs or breasts, diced
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 cup crushed tomatoes
  • 1 cup heavy cream
  • 1/2 cup plain yogurt
  • 1/4 cup unsalted butter
  • 2 tbsp vegetable oil
  • 1 tbsp smoked paprika
  • 1 tbsp garam masala
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp turmeric powder
  • 1-2 tsp cayenne pepper (adjust for heat preference)
  • salt and black pepper, to taste
  • fresh cilantro for garnish

INSTRUCTIONS

  1. Preheat the Yoder Smoker: Set your Yoder smoker to 250°F with your choice of wood for a smoky, aromatic flavor.
  2. Prepare the Chicken: In a large bowl, mix yogurt, smoked paprika, garam masala, cumin, coriander, turmeric, and a pinch of salt. Add the diced chicken, ensuring it’s well coated. Let it marinate for at least 30 minutes or overnight for deeper flavor.
  3. Sauté Aromatics: Heat a cast iron skillet on the smoker grates. Add the oil and butter, allowing it to melt and combine. Stir in the diced onions, green bell peppers, garlic, and ginger. Cook for about 10 minutes, stirring occasionally, until softened and aromatic.
