- 4 Sweet Potatoes
- Spray Duck Fat
- Plowboys BBQ Yardbird Rub
- 12 Slices Bacon
- 1/4 Cup White Miso
- 1/4 Cup Tapped Pure Maple Syrup
- 1 Tsp White Vinegar
INSTRUCTIONS
- Preheat your Yoder Smokers YS640S Pellet Grill to 400ºF set up for indirect grilling (diffuser installed).
- Peel the sweet potatoes. Spray with duck fat. Season with Plowboys BBQ Yardbird Rub.
- Wrap three slices of bacon around each sweet potato, covering the entire surface. Lightly season the bacon with Plowboys BBQ Yardbird Rub.
- Place the bacon wrapped sweet potatoes on a wire jerky/cooling rack. Transfer the rack to the second shelf of the grill.
- To make the Maple Miso Glaze, combine all ingredients in a bowl and whisk until smooth.
- When the potatoes have cooked for one hour, place the wire rack over a sheet pan, then brush a layer of the glaze onto each bacon wrapped sweet potato.
- Keep the pan and potatoes on the second shelf and continue cooking until tender when probed with a toothpick, about 30 minutes more. Glaze on more time, then remove from the grill.
- Serve whole or sliced into medallions.
