INGREDIENTS
- Smoked Pulled Pork
- 1 lb Tater Tots
- 1/2 Cup Orange Bell Peppers, chopped
- 1/4 Cup Jalapeño Pepper, chopped
- 1/4 Cup Red Onion, chopped
- 2 Cups Cheddar Cheese, shredded
- 1/2 Cup Tomato, chopped
- Your Favorite BBQ Sauce
INSTRUCTIONS
- Preheat your smoker to 350°F
- Spread the tots evenly across a large baking sheet, season with Country Bob’s Seasoning Salt, then place into the smoker
- While the tots are in the smoker chop your veggies and shred your cheese
- Once the tots are golden brown, move them from the smoker and into the kitchen
- In a large cast iron skillet make a base layer with the tots
- Add the jalapeño pepper, onion, and bell peppers
- Now grab the pulled pork and layer it evenly over the top
- Next sprinkle in the cheese and get the skillet into the smoker
- Once the cheese is melty, remove from the smoker and top with the diced tomatoes
- Finally, drizzle your favorite barbecue sauce across the top and enjoy!
