“The Texas Two step method consists of smoking a turkey at a low temperature of 225° for the first step. Smoking the turkey at a low temperature allows the turkey to get a good smokey flavor. The “Two Step” portion of the cook simply means you raise the temperature of the smoker to 450° for the remainder of the cook to crisp up the skin.” Thanks, Joe!

INGREDIENTS

  • Whole Turkey (14lb works best)
  • 2 Sticks Of Unsalted Butter
  • Seasoning (Cattleman's Grill Ranchero Rub)

INSTRUCTIONS

1. Dry off turkey with paper towels to remove excess moisture.
2. Trim off excess turkey skin
3. Inject turkey with melted butter
4. Season turkey with seasoning
5. Tie Legs together with butchers twine
6. Tuck wing tips under turkey
7. Preheat the Yoder Smokers YS640S to 225° and place turkey in smoker for 2 hours
8. Raise smoker temp to 450° after 2 hours
9. Turn turkey 180° at the 2 hour mark
10. Once internal temp of turkey is 150°, pour melted butter over the top of the turkey
11. Pull turkey once the internal temp reaches 160° to 165°
12. Let turkey rest for 15 minutes
13. Slice and enjoy!
